Hummus recipe-No Tahini!

I love hummus and don’t usually have tahini just hanging around so I had to come up with something! This is an easy recipe for a red pepper hummus requires no tahini. I’ve looked at several recipes and derived my own. I hope you like it.

2 (16 ounce) cans garbanzo beans, drained

3 tablespoons olive oil

1/8 cup lemon juice 

2 tablespoons smooth peanut butter

2 T garlic flakes or powder

2 jalapeño or cayenne peppers chopped

1/2 teaspoon ground black pepper

1/2 tsp salt

1 1/2 teaspoons cayenne pepper

1/2 teaspoon ground cumin

3/4 teaspoon dried oregano

In a blender or food processor combine garbanzo beans, olive oil, lemon juice, peanut butter, garlic, peppers, salt & cayenne pepper cumin and oregano. Blend on low speed, gradually adding reserved bean liquid, until desired consistency is achieved.

Makes approximately 3 cups
