This is my version of easy potato soup. It is really yummy on a cold night!
2-3 quart jars of home canned potatoes
1/3-1/2 c. Chopped onion
2 cans chicken broth
1 can cream of celery or chicken soup
1 pkg full fat cream cheese softened (low-fat doesn’t melt well)
Salt and pepper to taste
Put potatoes in cock pot and mash-up until most are in smaller pieces. Combine all ingredients except cream cheese. Cook for 3-4 hours on high or 6-8 on low. Add cream cheese in the last hour.
Substitutions: you can use evaporated milk instead of cream cheese. Lessen amount of chicken broth to 1-1/2 cans.
